Fajita FUN

Last week Logan and I had fajitas they are so fun to make and they are super yummy. Here is a recipe that we love. It is the healthier version so feel free to give it a try. However, if you like your fajitas saucy with a little bit of kick you can try our alternative recipe. It is super easy.
Ingredients: 1 1/2 pound chicken cutlets (about 8). 2 Tbs vegetable oil. Course salt and ground pepper. 3 bell pepers (ribs and seeds removed) thinly sliced. 1 red onion halved and thinly sliced. 1 fajita seasoning packet.1/4 cup water. 8 flour tortillas. Fresh cilantro leaves for serving. 1/2 cup sour cream for serving. Lime sliced for serving.
Directions: Cut up the chicken, onion, and bell peppers. Coat the pan with the vegetable oil and add the ingredients. Cook on medium heat. Once the chicken, onion, and bell peppers are cooked add half of the packed of fajita mix and add the water a little at a time until the sauce reaches a consistency that you like. Heat your tortillas in the microwave. Serve warm tortillas, fajita mix, and top with sour cream, cilantro, and lime. Logan and I like to add lettuce, cheese, and salsa on top too! Hope you like them! 1.) Messy Buns are the best invention ever

I like looking through old pictures and figured I would share a good one. This picture was taken on a Sunday afternoon when we were in high school. Logan and I decided to draw mustaches on each other in sharpi and wear them all day:) We were real cool.

Healthy POP

I love popcorn. I eat it all the time. Logan and I started to realize that we couldn't afford to buy boxes and boxes of popcorn to satisfy my cravings so we decided to make homemade popcorn. It is the easiest thing in the world and it is MUCH healthier. We just go and buy popcorn kernals in bulk at Winco for like $2 and we never run out:)

All it takes is: 1 Tbs Vegetable oil, ¼ cup popcorn kernals, and 3 tsp salt.

What you do: Pour the oil into a medium pot, then pour in your kernals, and turn up to meduim heat and cover. Then your kernals will be popped and you will be munching! You can melt some butter and put on top if you like butter but I just like a little salt:)

Finding a HOUSE...

Today Logan and I are going to Provo. We need to find an apartment for this August. This weekend is going to be full of walks of BYU campus, shopping at University Mall, looking for housing, eating a yummy places, playing with family, and driving! I am hoping I can find an apartment that looks like one of these. Bright and shinny just like us:) Try to have a bright weekend in all the gloom!

Learning & Books

So I feel like all I ever think about lately is graduating. I am thinking about moving, where I will work, how I will prepare for Grad School, living in a new town, and not having any homework. But something that dawned on me today was that I once I do graduate I won't get to go somewhere everyday and learn. Over theses last four years I have grown to love learning. I love sitting there and having someone spill out all of there knowledge so I can soak it up. I know I take school for granted alot of the time, but I am really going to miss this.
Once I am done with school for good I am just going to have to seek out opportunities to learn. For example this next year before Grad school I am going to read every book that I can get my hands on. Before college I used to keep track of how many pages I read each year. I know that sounds nerdy, but I loved watching my numbers get higher and higher. Over the 10 day break I am going to read Jane Eyre. I can't wait. What do you do to continue learning? Any good books?

Lighter General Taos Chicken

I love asian food, but I never make it at home. I found this recipe and logan and I loved it! It has hints of ginger, garlic, red pepper, and fresh snow peas. It was our fun Saturday night meal. It is healthy and delicious. I love brown rice so be sure to make sure to try this little combo!

Ingredients

  • 1 1/4 cups long-grain brown rice
  • 1/4 cup cornstarch
  • 1 pound snow peas, trimmed and halved crosswise
  • 4 garlic cloves, sliced
  • 2 teaspoons fresh ginger, grated and peeled
  • 3 tablespoons light-brown sugar
  • 2 tablespoons soy sauce
  • 1/2 teaspoon red-pepper flakes
  • 2 large egg whites
  • Coarse salt and ground pepper
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 2 tablespoons vegetable oil, such as safflower

Directions

  1. Cook rice according to package instructions. Meanwhile, in a large bowl, stir together 1 tablespoon cornstarch and 1/2 cup cold water until smooth. Add snow peas, garlic, ginger, sugar, soy sauce, and red-pepper flakes; toss to combine, and set aside.

  2. In another bowl, whisk together egg whites, remaining 3 tablespoons cornstarch, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Add chicken, and toss to coat.

  3. In a large nonstick skillet, heat 1 tablespoon oil over medium-high. Lift half the chicken from egg-white mixture (shaking off excess), and add to skillet. Cook, turning occasionally, until golden, 6 to 8 minutes. Transfer to a plate; repeat with remaining oil and chicken, and set aside (reserve skillet).

  4. Add snow-pea mixture to skillet. Cover; cook until snow peas are tender and sauce has thickened, 3 to 5 minutes. Return chicken to skillet (with any juices); toss to coat. Serve with rice.

The Adventure Begins!

Logan and I decided on our next adventure. This August after graduation we will be backpacking through... COSTA RICA! We bought out tickets last night. We are so excited and cannot wait to go and experience a new country. Neither of us have been to Central American and decided that it needs to be our next stop. We both have such a passion for traveling and can't wait for a new adventure. We will be staying in little hole in the wall places on the beach. You know it is high end when it mentions that they have hot water:) Now I just need to graduate...

11.) I don't think people should be able to eat apples in class.

Birthday DAY Gifts

Today March 13th 2011 is my 22nd birthday. It has been such a good day so far. I was woken up with Breakfast in bed, which consisted of cinnamon rolls and orange juice (more details and pics to come). But these were the GREAT gifts that I received today.


One of my best friends Makall send me a package. A shoe box with pringles inside... curious.
Oh wait there are the worlds greatest chocolate chip cookies inside. Thanks Makall baby!
Among flying all the way to Idaho to spend a week with me my mom also send me a Olive Garden gift card. Thanks mom!
My dear friend Emily made me a book with her Hands! It is a map of Paris and it is truly a work of art.
Ya with her Hands! Thanks Em!
My brother and Sister in Law gave me a gnome and costars. I love gnomes. I have one outside my door and now he has a friend to play with. And we used to steal costars from restaurants to use at home. shhhh. But now we have real ones.

Side Pony

My friend Becca inspired me to branch out and try some new hair styles. Everyday I feel like I do what Logan calls, "Crazy Hair" It is pretty much just air drying my crazy afro lion hair and letting it be free. Time for some structure ladies. So like everyone else I registered a couple of days ago. I registered for the last time at BYU-Idaho. I will graduate this Spring semester with my Bachelors degree and Logan will be getting his Associates degree and then we will be heading south to Provo. Logan starts at BYU in the Fall and I am applying for Grad School. I seriously can't wait for this July when our whole family comes to Idaho and we get to party. The best part is it will be warm outside. Exactly the way I wanted to end my stay in Rexburg with warm, sunny, weather:)

Date Night

Now what would date night be without some good ole self timer pictures? Friday night was date night. We ate chicken stripes and french fries for dinner, got some delicious sammy shakes for dessert, and then went and saw Tangled at the Cheap Theater. I may or may not have cried at the end. I mean come on I thought he was going to die. I started saying things like, "What?!? is this really happening?" haha I am such a sap, but it's fine. We love date night and our self timer pictures:)
Tonight we are renting a movie and making carmel corn. I just don't think I would survive without the weekends.

Birthday Month Present:)

So I came home today to a wonderful little surprise waiting for me on my door step. Logan's birthday present for me came today. From Logan I asked for a brand new North Face back pack. I am IN LOVE with it. See I was always one of those girls that bought back packs because they were super cute and stylish. Well, after four years of back problems I asked for a comfy, padded, awesome, back pack with a life time guarantee. Before he let me open it he sang, "Happy Birthday Month to you. Happy Birthday Month to you. Happy Birrrtttthhhdddaaayyy Mooonnnttthhh dear Taylor. Happy Birthday Month to you!" Thanks Logie for a great birthday Month present. Oh just so you all know I didn't take it off all night. I even wore it when I was making dinner:)

Burnt Orange Bliss

So my incredibly talented sister made me this orange cowl for my Christmas present. It is amazing in the Idaho winter. I double it up and it just raises my body temperature like crazy.
