Breakfast with Brooklyn

Brooklyn is in town! There is nothing like being with your best friend. This morning Brookie came over for waffles and strawberries and then laid on my bed while I tried to organize my crazy bedroom. I miss her like crazy when she is not around. So Brooke if you are reading this don't go back to Hawaii! Stay here with me. Ok it's a deal:)

Here you have the traditional first day of school pictures. Today was my first day of the Master's program at BYU. I made Logan take one too even though he didn't really want to. I have been out of school for a year and now I am back and hoping that I can make it through my program. Luckily I have a sweet husband who escorted me to class and quizzed me on the names of all the buildings on campus.   My first day was packed with syllabi and course expectations. Basically they tell you all of this crazy hard stuff that you are going to have to do and you leave class with your eyes glazed over. I know it is going to be hard, but I am so excited to learn about the topics that I love. Wish us luck this year!!!

Logan and I were so excited about our little vacation to Rwanda and Uganda. We arrived in Kigali Rwanda at 2:30am. An awesome couple that we know picked us up and let us crash at their house for a couple of days. On our first day in Rwanda we headed over to the Kigali Memorial Center. It is museum that is dedicated the victims of the Rwandan Genocide. It took us about 2 1/2 hours to get through. The museum is very educational and powerful. That night we decided to go have dinner at the Mille Colline for dinner. The Mille Colline was featured in the movie "Hotel Rwanda". We had dinner by the pool and it seriously felt like a scene out of the movie.
The next morning we got on a bus for a 6 hour ride to Southern Uganda. The ride was pretty crazy and we thought that we were going to run off the road a couple of times, but we made it safely to Uganda. We have family friends that are living in Uganda right now so they picked us up at the bus stop and took us out for some food. We went to this little restaurant that is run by a Swedish woman and her five cutie kids. We had a great time and ate ourselves silly. The next day we drove to one of my favorite towns in Uganda, Jinja! We stayed in this little place called two friends. Logan and I were so excited because there was a TV in our room!!! We hadn't watched TV in months so we were jumping on the bed with excitement. More of Uganda to come!!!

While in Ethiopia we were able to travel to Rwanda and Uganda as well. We were supposed to fly out at 10:00am  and our flight got delayed until 11:30pm. So, we had 13 hours kill in the capitol. We decided to go to the Sheraton hotel where they were hosting the African Union Summit. We hung around the hotel until we could get on the airplane. We left Ethiopia and didn't get into Rwanda until 2:30am. Pictures of Rwanda and Uganda to come!!!

Today is our 2 year anniversary. I cannot believe that we have been married for two years already. We have learned so much and our love has grown more then we could ever believe. Logan started the day off right by bringing me my favorite flowers this morning and tonight we had an elegant dinner at our favorite Italian restaurant in SLO, chowed down on some Cold Stone ice cream, and saw a cutie movie in the theater all by ourselves. I could not have imagined a more perfect night. I love you Logan and I am so grateful that you are my eternal companion.

Food in Ethiopia

One of the things we love most about traveling is immersing ourselves in a different culture. Traditional food is a huge part of Ethiopian culture. The most common food in Ethiopia is Njera. Njera is like a big pancake/crepe. It is made out of Tef and left to ferment until it has a strong bitter taste. They take rolls of Njera and layer it on the plate. Then they bring sauces called Wat. There are lots of different kinds of wat. Most of them are super spicey. Once you have your wat placed on top of your Njera you break of parts of Njera and mop up the wat and enjoy! In Ethiopia it is traditional to eat with your hands. So they come around and wash your hands before and after the meal.
When Logan lived in Ethiopia three years ago he was very close with a lady named Yeshi. She loved to feed the missionaries and showed them so much love. While in Ethiopia we went to Yeshi's house and she feed us until we thought we were going to POP! She is such a sweet wonderful woman.
